Walnut Brownies
1. Take 1 cup of softened butter (this time to give it a healthier twist, I used unsalted, homemade, white butter at room temperature) and whisk it using an electric hand mixer for a minute. Add 1 cup of brown sugar, 3 eggs one by one and whisk until they combine well into a smooth, fluffy paste.
2. Add 1/2 cup of melted dark compound chocolate/ plain milk chocolate/ chocolate chips to the mixture, 1tbs of vanilla extract and whisk again for a minute.
3. In a separate bowl, sieve and add 1 cup of all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 tbs baking powder and 1 tsp salt. Mix the dry ingredients uniformly and then add it to the wet batter. Add 2 tbs of ghee and mix evenly using the cut and fold method but try not to over-mix.
4. Pour the brownie batter in a well greased tin and put walnuts on top of it; you may press the walnuts lightly into the batter to embed them so that they don't fall off and bake it at 180 degrees celsius for 35 minutes in an oven (which is to be pre-heated at 180 degrees celsius for 10 mins).
5. After they are baked, you can check with a toothpick if its done or not(the toothpick should come out clean) and let it cool down for some time before cutting them into pieces. This prevents them from crumbling down and gives it time to set. You can enjoy them with tea/coffee/ice-cream and store them in an air-tight container to prevent them from drying up.
