Lavash crackers with Hummus
1. For Lavash: Take one cup all purpose flour and add 1tsp salt, 1tsp powdered sugar, 1/2tsp eno, 1 tsp pepper powder, 2-3 tbs melted butter and water to knead the dough. After kneading the dough add 4tbs of olive oil on it and let the dough soak in the oil for 40 mins.
2. After 40-45 mins, knead the dough once again and roll it on a flat surface until it spreads like a thin sheet. Put black sesame seeds and some olive oil and roll it once again and cut sharp triangles. Fry these crackers in regular oil or bake them for 15 mins until golden.
3. For Hummus: Take one cup of overnight soaked chickpeas(chole) and boil them in a pressure cooker for 20mins. After boiling drain the entire water, add 6-7 cloves of garlic, juice of one big lemon, salt to taste, paprika powder according to your spice level, 3tsps of mixed herbs, and 2tsps of slightly roasted white sesame seeds. Add 5-6 tbs of olive oil and blend the mixture until you get a smooth paste. The mixture will be quite thick and sticky so keep adding water and drops of olive oil till you achieve a smooth paste like consistency. Top with chopped olives and a sprinkle of red chilli powder.
