Banana Walnut Muffins


1. In a bowl, add 1 cup granulated brown sugar, 1/2 cup oil, 2 tbs melted butter, 3 ripe, mashed, medium sized bananas, 1 tsp vanilla essence and beat with a hand mixer till you get a somewhat smooth mix. Add 1tsp of cinnamon powder, 1tsp baking powder, 1 tsp baking soda, 1/2 tsp salt, 3tbs finely chopped walnuts and 1 1/2 cups of all purpose flour. Mix thoroughly using the cut and fold method.

2. Pour the mixture into well greased muffin moulds and add a small piece of walnut on top. Instead of walnut pieces you can also add chocolate chips. This batter will make 8 medium size muffins. Bake them at 180 degree celsius for 15 minutes. Remove them from the moulds only after they cool down.
