Apple Crumble cake
1. For the cake base- Beat 2 eggs with 3/4 cup brown sugar till it becomes fluffy. Add 3/4 cup vegetable oil, 1/4 cup melted butter, 2tbs vanilla essence, 1tsp cinnamon powder, 1tsp salt, 1tsp baking soda and 1 tsp baking powder and beat well. Sieve 1 1/2 cups all purpose flour into the batter and mix using cut and fold method. pour the mixture in a well greased baking dish.
2. The second layer will be of finely chopped apple pieces(1 1/2 apple may suffice) mixed with a drizzle of honey; put them on top of the previously poured batter.
3. For the apple crisp layer- Mix 1/2 cup of sifted whole wheat flour with 1/2 cup of brown sugar and 1/4 cup of rolled oats. Add 3-4 tbs of melted butter and crumble with hands. Add a pinch of baking powder and cinnamon powder to this crumble and spread it all over the layer of apple slices.
4. Bake for 45 mins at 180 degree Celsius. Remove the cake from the mould only after 2 hrs after it cools down completely and serve with vanilla ice cream.
