Lemon & herb Chicken with Rice
1. Marinate boneless chicken pieces(slit them first) in coriander, ginger& garlic paste, lemon zest, lemon juice, salt and pepper to taste, herbs(oregano, chilli flakes, thyme-whatever is available) and olive oil for at least two hours.
2. Cover them with aluminium foil and bake them for 25-30 mins; then toss them in butter and flour gravy till you feel the chicken is perfectly cooked and has absorbed all the flavours.
3. Serve them with rice(cooked in chicken broth, whole spices and little bit of finely chopped onion for the extra flavour)
